We can't believe that easter is just over a week away! We wanted to share these fun and all natural dyed deviled egg recipies with you to wow your guests over the holiday.

Natural Dyed Deviled Eggs
8 - hardboiled eggs
2 - cups vinegar
2 - cups water
2 - tbsp. Kosher salt
2 - tbsp. sugar

Classic Deviled Egg Mixture
Yolks from 6 hard boiled eggs
1/4 cup mayo
1 tsp. white vinegar
1 tsp. yellow mustard
pinch of salt + pepper to taste

Purple Eggs
1 Beet, peeled and cut into quarters
3 sprigs fresh dill
2 Shallots, sliced
1 tsp. mustard seeds

Orange Eggs
1 carrot, peeled + sliced
2 garlic cloves, sliced
1 tsp. choppes beets
pinch of saffron

Yellow Eggs
1 inch piece of ginger, sliced
2 tsp. peppercorns
1 tsp. tumeric

Put peeled eggs in a jar or bowl. Cook vinegar, salt and sugar and dissolve. Depending on what color is desiered, add ingredients listed above. Let liquid cool, pour over eggs & chill in refridgerator at least four hours or overnight for a darker shade of color. Slice eggs once at desired color, and using yolks mix classic deviled egg mix ingredients. Place mixture into a piping bag, and pipe into eggs.

cev4We're counting down the seconds to summer, so our team decided to start putting together our favorite summer receipies. This shrimp and pineapple ceviche is not only so delicious but it is also incredibly easy to make!




Shrimp + Pineapple Ceviche

1 Lb. Raw Shrimp (peeled, deveined and roughly chopped)

5 limes

1 diced jalapeno

1 cup diced red onion

2 diced vine ripened tomatoes (seeds removed)

1 diced red bell pepper

1 cup diced fresh pineapple

1/4 cup chopped cilantro

3 tbsp. extra virgin olive oil

salt + pepper to taste

In a large bowl add the raw shrimp and the juice of four limes, mix well and let sit in the refridgerator for 20-30 minutes or until the shrimp is pink + white. Remove from the fridge and strain the lime juice. Add the jalapeno, red onion, tomato, red pepper, pineapple, cilantro and add the juice of the remaining lime to the bowl and mix well. Add salt and pepper to taste, and leave to marinate in the fridge for no less than one hour. Top with fresh avocado and serve with your favorite chips, or over a salad.

Although we all thought winter was on its way out, it is about to sneak up on us again with tomorrows storm. So when it is too cold and snowy to go outside and make s’mores by a campfire, why not bring it inside for everyone to enjoy?!
This dessert bar is so easy to do at home for your next party – and also perfect for chilly days like tomorrow. All you need is: a fun display, some glass vases, a shallow wooden box, lots of rocks, sternos, and all of your s’mores elements. You can be as creative as you’d like with your display – but make sure to use a good amount of rocks around your sternos, so they stay nice and secure.

hol8With award season in full swing, we thought it would be a great idea to share one of our favorite events yet – Tyler’s Hollywood Bar Mitzvah!
His Hollywood theme was full of amazing decor and so many special touches.
His escort card display really POPPED, and we recreated a quick version to show you just how easy it is for you to do at home in celebration of your favorite awards show! All you need is a clear acrylic tray and some popcorn kernels. You can use any shape escort card that you’d like, but we felt the directors clap board was just perfect!

We are so excited to announce the launch of the new Nikki Glekas Events blog. Our team has been hard at work for the last six months, settling into our new home at Chelsea Piers Connecticut!
