Vegan Quinoa Sushi

With Summer days fast approaching be sure to keep up your healthy eating!
Check out this decadent vegan zucchini quinoa sushi roll. It's not only delicious, but looks incredible! It's so easy to do, you're sure to impress your friends at your next get together.

Sushi Close Up

1 cup cooked red quinoa
2 zucchini
1 carrot cut into strips
1 red pepper, julienned
1 avocado cut into strips
A bunch of chopped fresh mint leaves
Light soy sauce to serve
Wasabi to serve

Before preparing sushi, make sure to grab a bamboo sushi mat, some saran wrap and a sharp knife. Using a mandolin, slice the zucchini into thin strips. Once sliced, use some saran wrap to protect your bamboo roller, and gently place the zucchini so it overlaps. This will create the outside layer of your roll. Place quinoa down the center, following with strips of avocado, red pepper, and carrot. Sprinkle the fresh mint over the quinoa.

Once all of the ingredients are in place, gently fold the ingredients into a roll. You can cut the roll into 6 or 8 pieces. We love drizzling some sriracha mayo on top and sprinkling with sesame seeds. feel free to get creative with your toppings!

We hope you love this delicious treat!

Mother's Day

Although we think that mother’s day should be everyday – May 14th will be here soon enough, which means it’s time to start thinking of what to get mom to prove how thankful you are to have her throughout the year. You may not be able to buy love, but you can of course, buy her something sweet to show your appreciation.

Our team put together this list of our favorite gifts for mom. There is something for everyone and something for every budget - from jewelry to flowers – we’ve got you covered!

Monogram Necklace

Nikki’s top pic! This necklace is timeless and something mom can enjoy for years to come. We found ours at Splurge Gifts in Greenwich, CT. If this necklace isn’t moms speed – don’t worry! Splurge is an amazing boutique right in the heart of the shopping district in Greenwich. They have an incredible selection of gifts for every taste.

Our next favorite place to get mom a gift is right in Stamford! Wagon Wheel Fine Wines and Spirits has an amazing selection of wines and champagnes. We absolutely love Rosé, and they have an amazing selection in store right now for Mother’s Day.

rose bottlerose lable

Does mom love to cook? This set of flavored olive oils would be the perfect present for any foodie momma! Sold in the All Star Café, located right in Chelsea Piers. The set includes up to four flavors. Flavors include: garlic, pesto, lemon, blood orange, basil, and butter.

Why buy mom a bouquet of roses, when you can get her something that will last much longer? A succulent or orchid plant is not only gorgeous, but both are so easy to care for! You can find them at almost any gourmet grocery store.

She deserves it! A massage, blowout, or hair treatment is sure to relax mom – after all she does so much for you. Noble Salon in Stamford is the perfect oasis for a hair treatment or blowout. Chelsea Piers Connecticut has an in-house massage parlor – and an amazing sauna.

Happy Mother's Day!!

We love the chance to spend holidays with our friends and family, to indulge in yummy food, and to play hostess. With Easter being this sunday, we thought what a better way to celebrate than with a DIY Mimosa Bar?!

Our team put together this amazing bar to kick off the holiday weekend just to show you how easy it is to do!
(we may have also really wanted to be outside and have a refreshing cocktail on this gorgeous day)

Here's what you need: various fruit juices [pictured L-R is: peach nectar, pink grapefruit, pear nectar & orange], assorted fresh fruit [pictured is: berries, pears, watermelon, apples and grapefruit], and some bubbly - champagne, prosecco or cava. To make a mimosa you first fill the glass halfway with champagne, add in your favorite fruits and top with the juice of your choice.

The combination possibilities are endless! Here's some of our favorites:
the classic: orange juice + champagne
bellini: peach nectar + prosecco
moonwalk: grapefruit juice + champagne

You can get as creative as you'd like with the display. Its fun to mix and match vases of all shapes, heights and sizes. It's important to keep the chapmagne as cold as possible.
The mimosa bar isn't just good for easter - but any special celebration that you may be planning.

Cheers from our family to yours! Happy easter!
