With Summer days fast approaching be sure to keep up your healthy eating!
Check out this decadent vegan zucchini quinoa sushi roll. It's not only delicious, but looks incredible! It's so easy to do, you're sure to impress your friends at your next get together.

1 cup cooked red quinoa
2 zucchini
1 carrot cut into strips
1 red pepper, julienned
1 avocado cut into strips
A bunch of chopped fresh mint leaves
Light soy sauce to serve
Wasabi to serve

Before preparing sushi, make sure to grab a bamboo sushi mat, some saran wrap and a sharp knife. Using a mandolin, slice the zucchini into thin strips. Once sliced, use some saran wrap to protect your bamboo roller, and gently place the zucchini so it overlaps. This will create the outside layer of your roll. Place quinoa down the center, following with strips of avocado, red pepper, and carrot. Sprinkle the fresh mint over the quinoa.

Once all of the ingredients are in place, gently fold the ingredients into a roll. You can cut the roll into 6 or 8 pieces. We love drizzling some sriracha mayo on top and sprinkling with sesame seeds. feel free to get creative with your toppings!
