cev4We're counting down the seconds to summer, so our team decided to start putting together our favorite summer receipies. This shrimp and pineapple ceviche is not only so delicious but it is also incredibly easy to make!




Shrimp + Pineapple Ceviche

1 Lb. Raw Shrimp (peeled, deveined and roughly chopped)

5 limes

1 diced jalapeno

1 cup diced red onion

2 diced vine ripened tomatoes (seeds removed)

1 diced red bell pepper

1 cup diced fresh pineapple

1/4 cup chopped cilantro

3 tbsp. extra virgin olive oil

salt + pepper to taste

In a large bowl add the raw shrimp and the juice of four limes, mix well and let sit in the refridgerator for 20-30 minutes or until the shrimp is pink + white. Remove from the fridge and strain the lime juice. Add the jalapeno, red onion, tomato, red pepper, pineapple, cilantro and add the juice of the remaining lime to the bowl and mix well. Add salt and pepper to taste, and leave to marinate in the fridge for no less than one hour. Top with fresh avocado and serve with your favorite chips, or over a salad.
